To evaluate beers, waters, and non-alcoholic beverages, Monde Selection collaborates with several laboratories including Vivaqua and the “Meurice Institute” whose scientists are considered the best Belgian experts in the field and are internationally recognised for their expertise.
OUR JURY EXPERTS
This professional Jury consists of technicians, master brewers, chemical engineers famous for their knowledge in food science, biotechnology, brewing science, and fermentation technology.
EVALUATION PROCESS
The evaluation process starts with organoleptic tests assessing the beverage’s appearance, odour, taste, aftertaste, mouthfeel, conformity to style and many other criteria. In order to form a comprehensive quality judgement, experts not only analyse and control chemical or microbiological parameters, but also evaluate the product composition. For beers, the analysis of the foam, bitterness, pH, etc. also helps to complete the sensory evaluation. As for the waters, the jury looks at the minerals, pH, anions, cations etc. which may be subject to various standards in different countries and target audiences.
The evaluations take place over a period of four months with a maximum of 10 products tasted per session. The evaluation sheets include up to 25 parameters of analysis. The results lead to the creation of the product’s quality profile.
